TYPICAL GEOGRAPHIC INDICATION: SICILY
Grape types: Catarratto and Moscato.
Harvest: August; once picked, the grapes are laid out to dry on racks for at least 7 days.
Bottling: Single batch.
FERMENTATION
Method and duration: The dried grapes and pressed and left to macerate at low temperatures for around 5 hours, before being pressed again very lightly and fermented at 18-20˚C
Temperature: 18-20˚C.
Malolactic: No.

TASTING NOTES
