The Principe di Corleone winery is equipped with two grape unloading and pressing stations, utilizing advanced cold technologies in the gentle pressing of white grapes. The fermentation tanks vary in size to suit the specific grapes being processed, a deliberate choice to accentuate their varietal attributes. With nearly 50 consecutive harvests under their belt, the team at Principe di Corleone has honed their craft to achieve exceptionally high standards of quality. Their meticulous oenological practices have been refined over the production of millions of bottles that have found their way to both Italian and international markets. Their production process is designed to allow white and red grapes to be handled on separate, self-contained lines, each employing winemaking techniques tailored to the specific type of wine.  The use of stainless steel during the aging phase holds great significance as Vincenzo Pollara, working alongside in-house oenologist Giuseppe Diesi, consultant Vito Giovinco and the team, meticulously select the appropriate yeast strains, oversee filtration processes, monitor stability, and, finally, oversee the bottling process. This comprehensive approach ensures that each bottle of Principe di Corleone wine embodies the essence of the vineyard and the dedication of the winemaking team.
THE BARREL CELLAR AND THE REFINING OF WINES

From the expansive 5000-liter barrels to the refined French oak barriques, the art of refining and preserving the identity of a territory.

Principe di Corleone is dedicated to utilizing barrels and barriques crafted exclusively from French oak, each selected with specific capacities tailored to the type of wine being refined. This practice predominantly applies to red wines, where the duration of residence in these vessels is adjusted in accordance with their varying sizes. This ranges from the substantial 5000-liter barrels to the medium-sized 2500-liter ones, as well as 550-tonneaux, culminating in the 225-liter barriques, exclusively reserved for second and third passage use. Temperature and humidity levels are meticulously regulated and continuously monitored, a process that varies based on the designated area's purpose. This careful attention to environmental conditions ensures that each wine's unique characteristics are preserved and enhanced during this crucial stage.

SUSTAINABILITY

The success story of Principe di Corleone is deeply rooted in their commitment to preserving their territory and showing the utmost respect for native grape varieties.

 

Sustainability is at the core of the Pollara family's company. Their goal is to minimize the environmental impact through a range of initiatives such as avoiding chemical weeding in the fields, opting for eco-compatible materials, actively reducing waste, and implementing processes to recover water and heat. Additionally, they're harnessing the power of the sun, with plans to scale up their solar energy production to reach 130 kW by 2023. 

In July 2021 Principe di Corleone joined the SOStain Foundation, embracing integrated protection regulations and achieving certification through VIVA. This strategic move aligns with their belief that sustainability not only fosters innovation but also reduces costs and ultimately results in wines that are ethically produced.

Looking ahead, Principe di Corleone has set a noteworthy target: by 2024, their entire production will be certified as organic.
