Sinedie Chardonnay

IGP (Indicazione Geografica Protetta) Terre Siciliane

Grapes used: Chardonnay. Higt-trained for low yield.
Yield per hectare: 40 quintals.
Harvest: 7th-8th August.
Bottling: Single batch.
 
FERMENTATION
Method: Temperature controlled, in stainless steel tanks up to 4° Babo,
fermentation is then completed in new Allier (French oak) barriques.
Temperature:  16-18°C.
Durata: 10 - 12 days
Malolactic: No.
Ageing potential: Will age succesfully during the two years after purchase.

TASTING NOTES
Deep straw-yellow color.
Assertive, generous bouquet.
The palate is clean, decisive, elegant and long-lasting.
 
ACCOMPANIMENT
Serve at 10-12°C. with dishes based on fishes, shellfish and cold meats.

Chardonnay: Originally from Burugundy, Chardonnay is the most present international vine variety in Sicily, thanks to the perfect microclimate of the island and its clay soil.

The fruit is characterized by medium-sized grapes with tender yellow peel.

From the vinification process it is obtained a fruity scented wine with and elegant and harmonious flavor and a good alcoholic degree
