Temperatur: 24 - 26°C.
Dauer: 6 - 8 Tage.
Malolaktische Gärung: ja.
Reifung in Eichenfässern: 8 Monate für ungefähr 1/3 des Weines.
Art der Fässer: Eichenfässer mit einem Fassungsvermögen von 2000 und 5000 Litern.
